Caramel Apples

1 1/2 cups chopped peanuts
6 firm apples, washed and dried
1 teaspoon vanilla
1 teaspoon baking soda
3/4 cup sugar
1/2 cup butter
1/8 cup white corn syrup

1. Place peanuts in a shallow bowl; set aside.
2. Insert wooden skewers into the stem end of apples.
3. In a small dish, stir together vanilla and baking soda; set aside.
4. In a heavy saucepan, place sugar, butter, and corn syrup.
5. Cook over medium heat, stirring to blend
6. Continue to cook until mixture reaches 300 degrees fahrenheit on a candy thermometer.
7. Stir in vanilla mixture.
8. Dip and twist apples in hot caramel until coated.
9. Roll apples in nuts.
10. Place on waxed paper to harden.
